Vegan or not, this recipe is a lighter, healthier version of the winter comfort food, without sacrificing flavor. I’ve tried many recipes over the years and I took the best of each recipe to create this simple, vegan French onion soup recipe. Mushrooms and garlic add substance to the soup while miso gives depth to the broth. Instead of topping with gooey cheese, I opted for roasted garlic and vegan parmesan on top of char grilled toast.
