Roasted Garlic Cloves Recipe

One of the most versatile and humble ingredients in the kitchen is garlic. I’m always trying to find new uses for it. One of my all time favorite appetizers is simple roasted garlic cloves. Not only does it give a buttery sweet flavor, it is one of the easiest appetizers to make. After roasting, the garlic turns into soft bulbs of sweet spreadable garlic, perfect for smearing on crispy toast points. A great alternative to traditional garlic bread.

Simply remove most of the papery outside of the garlic and cut off the top of the bulb. Drizzle with 1-2 tablespoons of olive oil over the exposed garlic cloves, letting the oil sink in. Wrap in aluminum foil and place in the preheated 400 degree oven and let it roast for 40 minutes. When easily pierced with a knife, you’ll know it’s ready. You can let it roast until a deep golden brown for more of a caramelized flavor. Remove from oven and let it cool. The bulbs should easily slip out of the garlic peel. Serve with charred toast or use in soup, salad dressing or any recipe that calls for raw garlic, you can use both raw and roasted garlic for a more dynamic flavor.
