For vegans, this shitake bacon recipe works as a great bacon alternative on BLTs, to top your favorite salad or on your breakfast sandwich. You can really use it with any other recipe that calls for crispy bits of bacon. Unlike real bacon, shiitake mushrooms contain eritadenine, a compound known to reduce cholesterol levels in the blood. Other proven health benefits of shiitake mushrooms include: increases energy and brain function, helps support a healthy immune system, enhances cardiovascular health and improves skin health. If those aren’t reasons enough to swap out your bacon for shtiiake bacon, then I don’t know what will convince you.

INGREDIENTS

1/2 pound shiitake mushrooms

2 tablespoons organic extra virgin olive oil

1/4 teaspoon salt

INSTRUCTIONS

1- Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.

2- Remove shiitake stems and brush off any dirt from mushrooms. Slice mushrooms into 1/4″ thick slices.

3- In a medium bowl, toss the mushrooms, olive oil and salt. Make sure to coat everything evenly, add more olive oil and salt as needed.

4- Transfer mushrooms to the baking sheet in a single layer. Give mushrooms enough space to crisp up, don’t over crowd your pan.

5- Bake in the preheated oven for 12-15 minutes, until crispy golden brown. Be sure to check often as they can burn quickly.

6- Remove from oven and let them cool for five minutes, as they will continue to crisp at this point.

7- Add to your favorite recipe as a bacon alternative.

To save your shiitake bacon leftovers, simply place in an air-tight container with a paper-towel to absorb any moisture, this will ensure that they remain crispy.
